Khao Soi is a Northern Thai dish influenced by the culinary traditions of Yunnanese Muslim Chinese (Khao Soi Haw). Its flavor has been adapted to the Lanna way of life, becoming a staple dish in the Lanna region that is not easily found in other parts of Thailand. Khao Soi chili paste can be used to prepare a type of curry with a unique aromatic blend of spices, served over noodles, which Northerners call Khao Soi noodles. It can be used in dishes with beef and chicken.
Khao Soi is typically enjoyed with side dishes such as red onions and Mae Noi brand seasoned pickled vegetables, following the Yunnanese Chinese recipe. Although Khao Soi can be found throughout all provinces in the North, it's important to understand that the cooking style in each area may vary. This is also true for Khao Soi Chiang Rai. As Chiang Rai province is more heavily influenced by Yunnanese Chinese (Haw Chinese) cooking traditions than other areas, Chiang Rai's Khao Soi has a more intense, rich, and aromatic flavor than others. What makes Chiang Rai's Khao Soi distinct from other regions is:
(1) The use of ingredients and a spice ratio that differs from general curry powder. Some of these spices may not be found in regular curry powder. (2) The side dishes for Chiang Rai's Khao Soi are often not just simple pickled vegetables, but are usually served with seasoned pickled vegetables. These seasoned pickled vegetables enhance the flavor of Khao Soi, offering a sour, salty, sweet, and slightly spicy taste, with the aromatic fragrance of the spices used in pickling. The pickled vegetables themselves consist of pickled mustard greens, Chinese mustard root, and salted ginger.

This reduces the steps and time required for preparing Khao Soi. Even novice cooks can prepare it deliciously on their first try. Simply pan-fry beef or chicken in a pan over medium heat, then add the Khao Soi chili paste and mix thoroughly. Gradually add the head of coconut milk until it starts to change color, then add the remaining coconut milk and simmer until boiling and the chicken is cooked. With just these steps, you will find that "you can do it too."

Note: For customers who do not prefer very spicy food, you can reduce the amount of chili paste slightly, but you should add more curry powder to maintain the color and aroma. Conversely, if you prefer very spicy food, you can cook Khao Soi as usual, but customers can add roasted chili oil to their own bowl (like when eating noodles). For beef Khao Soi, it may be necessary to boil or simmer the beef over low heat beforehand to make it tender. The broth can be used in place of the thin coconut milk when preparing the curry.
